I think Dean has always been trying to preserve the family dynamic from back when Mary was alive, so his mindset is always rooted in something gentle, even when he's being violent. But the only life Sam has ever known is hunting, so he's got more of a sense of righteous anger at the way he was raised than Dean has.

Dean took his place, so the hypocrisy is wilddd and the fact Sam is too soft-hearted to mention how much so. I love this episode, and I loveeee seeing Sam start to blatantly step up into the protective position. For all of Dean's machismo, when baby bro has a good reason to fight, he's far scarier?? Let's gooo. Also, fun trivia -- Jensen was dating the actress that played the crossroads' demon once upon a time.
